Beef rendang, the dish that makes Raya special

I have a weakness during Hari Raya, the weakness that packs all the pounds back on that the month of fasting during Ramadhan sheds. It’s beef rendang.

Love the stuff. Great with everything you can think of. Have it with rice? Delicious. With lemang/ketupat? Yes sir! How about a sandwich or a wrap? Easily done, and super tasty. Even eating it on it’s own? Throw in a couple of boiled potatoes and you’re good to go.

I really can’t think of a circumstance when rendang wouldn’t taste good.

This is what i cooked up for lunch today. Ate it with a couple of soft dinner rolls, soaking up all the gravy goodness.

And easy to make too. Here is a simple recipe from Allrecipes.com:

3/8 pound shallots
3 cloves garlic
15 dried red chile peppers
5 slices fresh ginger root
5 lemon grass, chopped
2 teaspoons coriander seeds
2 teaspoons fennel seeds
2 teaspoons cumin seeds
1 pinch grated nutmeg
1 tablespoon vegetable oil
1 1/4 pounds beef stew meat, cut into 1 inch cubes
1 1/2 tablespoons white sugar
2 cups shredded coconut
5 whole cloves
1 cinnamon stick
1 2/3 cups coconut milk
7/8 cup water
salt to taste
